 2 cups Spinach
 4 oz Cooked boneless and skinless chicken breast, diced
 1 Hard boiled egg, cut in lengthwise1 pc
 ½ cup Chopped cucumber, diced
 ½ Avocado, sliced1/2 pc
 1 pinch Salt and pepper

Start by washing the spinach and placing it at the base of a salad bowl and sprinkle a little salt and pepper.


Arrange the remaining toppings in desired design.


Drizzle the salad olive oil and sprinkle salt and pepper if desired.

Notes & Tips

1. Any type of lettuce can be used used as bedding for your salad.

2. You can use a fat-friendly ranch dressing or blue cheese for your salad if you prefer.

3. Varied timings and textures for your hard-boiled eggs:
Soft-boiled eggs for 4 minutes
Custardy yet firm soft-boiled eggs for 6 minutes
Firm yet creamy hard-boiled eggs for 8 minutes
For very firm hard-boiled eggs for 10 minutes

4. To meal prep, this salad, simply assemble the salad except the avocado and the dressing in airtight containers. You can add the avocado and dressing just right before serving. You can always pull a container from the fridge when you need one.
