Pre-heat the oven at 350F/175C. Prepare a muffin tray with coconut oil or non-stick cooking spray. Set aside.

Break all eggs in a bowl and whisk until fully combined. Set aside.
Chop the spinach, basil and tomatoes.

Fill in 3 cups of the muffin tin with the egg mixture. Then divide the vegetables to the cups.
Leave about 1 cm space at the top of each cup to allow the omelet to puff a little.

Bake in the oven for about 18-20 minutes until firm and golden.
Allow to cool and serve.

2. If a fluffier muffin is preferred, the addition of milk to the egg mixture can make fluffy omelet muffins.

3. You can make your muffins ahead of time and freeze them in food-safe resealable bags. Pop them in the microwave for about 30-40 seconds before serving. But these Mini Omelets are best served fresh.
